Cozinhar, muitas vezes todos na cozinha, os miúdos "a ajudar" e depois, finalmente, todos à mesa, que aqui por casa, felizmente, todos comem bem e de tudo, apesar de algumas pequenas "esquisitices" que se vão instalando nas gentes mais pequenas!...

Mas devíamos! Porque ficam&lt;br /&gt;muito bons!&lt;br /&gt;&lt;br /&gt;1 copo de água&lt;br /&gt;2 cl. sopa açúcar&lt;br /&gt;2 cl. chá sal&lt;br /&gt;2 cl. sopa óleo&lt;br /&gt;3 copos farinha (usamos 65)&lt;br /&gt;1 1/2 cl. chá fermento biológico seco (tipo Fermipan)&lt;br /&gt;1 cl. sopa leite em pó (opcional)&lt;br /&gt;&lt;br /&gt;Colocar na máquina de fazer pão, no ciclo Massa.&lt;br /&gt;Formar 8/9 bolas, colocar num tabuleiro de forno e deixar levedar de novo por cerca de meia hora.&lt;br /&gt;Pincelar com leite, polvilhar com sementes de sésamo e levar ao forno, a 200 ºC, por cerca de 20 min.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;a href="http://1.bp.blogspot.com/_SxV4IpZtax8/Suyv98fDtLI/AAAAAAAABPw/6xpx8edEJX8/s1600-h/HPIM6545.jpg"&gt;&lt;img style="MARGIN: 0px 10px 10px 0px; juntar 40 g de farinha e mexer até cozer; juntar, aos poucos, 1 l de leite; temperar e mexer sempre até engrossar) e reserva-se.&lt;/p&gt;&lt;p&gt;Cozem-se espinafres (usámos congelados), escorrem-se bem e passam-se na frigideira, com azeite e alho. Reservam-se.&lt;/p&gt;&lt;p&gt;Num tabuleiro de forno, coloca-se uma camada de sanduiches, uma camada de molho branco e uma camada de espinafres. Vai-se repetindo até esgotar as sanduiches e os espinafres. Regar com o restante molho branco. Decidimos então fazer o seguinte:&lt;br /&gt;&lt;br /&gt;Num tacho refogámos alho francês cortado às rodelas num pouco de azeite. Juntámos tomate seco picado e deixámos cozinhar um pouco. Juntámos a carne assada cortada em bocadinhos e temperámos com um pouco de molho de soja e de vinho branco. Deixámos cozinhar mais um pouco. Juntámos duas colheres de farinha, mexemos e juntámos um pouco de leite. Mexemos para envolver e temperámos com manjericão seco. Colocar num tabuleiro untado (ou com papel vegetal), com uma distância de 1 dedo umas das outra, pincelar com gema de ovo e azeite. Começe então por preparar o caldo do risoto. Leve ao lume uma panela com uma cebola, a salsa, a cenoura, os pezinhos dos cogumelos, o alho, sal e uns grãos de pimenta. Deixe cozinhar tudo muito bem, coe e reserve. Corte ambos os cogumelos em laminas e reserve. Leve um tachinho ao lume e derreta manteiga. Frite a outra cebola bem picadinha e acrescente o arroz. Deixe fritar até o arroz começar a ficar translúcido. Com o lume brando adicione o vinho branco, mexendo bem e deixe evaporar por completo antes de começar a acrescentar o caldo. Adicione os cogumelos previamente laminados e começe a acrescentar o caldo (entre 2 a 3 chávenas), aos poucos, mexendo sempre. Assim que o arroz estiver cozinhado (firme, mas cremoso), acrescente o parmesão e rectifique de sal e pimenta. Mexa tudo uma última vez e deixe repousar 2 minutos antes de servir.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;Ficou delicioso!&lt;/div&gt;&lt;div&gt;Realmente o caldo de legumes feito em casa não tem nada a ver com qualquer um que se possa comprar. Junta-se o bacalhau. Derreta o chocolate amargo no microondas ou em banho-maria. Numa tigela, misture a farinha, o cacau, o bicarbonato de sódio e o sal. Noutra tigela, bata a manteiga, o açúcar amarelo e o açúcar. Junte o chocolate derretido e misture. Ainda batendo, junte a essência de baunilha e o ovo. Misture os ingredientes secos que estavam reservados e, por fim, acrescente o chocolate picado. Forme pequenas bolas, do tamanho de uma noz, $e coloque-as num tabuleiro forrado de papel vegetal, com um espaço de cerca de 5 cm entre cada biscoito. Não nivele a massa. Leve ao forno por 18 minutos. No meio do tempo, abra o forno e espalhe os smarties nos biscoitos e volte ao forno para os minutos restantes. Teste com um palito para ver se a massa está assada; o palito não pode sair molhado. Incorpora-se a manteiga à farinha e adiciona-se água pouco a pouco, até obter uma massa homogénea e elástica. Fazem-se 8 bolinhas iguais, achatam-se um pouco e deixam-se descansar por 30 minutos cobertas por um pano.&lt;br /&gt;Estendem-se as bolinhas com um rolo. Principalmente para estes dias frios, com um chá ou um café bem quente!...&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Ingredientes:&lt;br /&gt;&lt;br /&gt;meia lata de leite condensado&lt;br /&gt;200 g de manteiga&lt;br /&gt;150 g de açúcar&lt;br /&gt;150 g de farinha&lt;br /&gt;4 ovos&lt;br /&gt;125 g de ameixas secas cortadas (vale a pena usar as que já vêm sem caroço)&lt;br /&gt;2 colheres dechá de fermento&lt;br /&gt;125 g de goiabada amassada&lt;br /&gt;&lt;br /&gt;Bate-se a manteiga com o açúcar. Acrescentam-se as gemas, a farinha com o fermento, o leite condensado, as ameixas e a goiabada. Mistura-se bem e, por último, envolvem-se as claras batidas em castelo. Vai ao frigorífico.&lt;br /&gt;&lt;br /&gt;Claro que também há as versões que levam mousse, ou leite creme, ou pudim, ou outro tipo de bolo, mas esta mistura ficou muito boa! Feito com azeitonas e azeite, ficou macio, perfumado e muito saboroso!&lt;br /&gt;&lt;br /&gt;Aqui fica a receita (metade da original (de João e o Fogão) e mesmo assim deu um pão enorme...):&lt;br /&gt;&lt;br /&gt;500 g de farinha de trigo T65&lt;br /&gt;2 colheres de sopa de fermento bilológico seco&lt;br /&gt;75 g de azeitonas verdes picadas&lt;br /&gt;1 ovo&lt;br /&gt;50 ml de azeite&lt;br /&gt;1 colher de sopa de sal&lt;br /&gt;1 colher de sopa de açúcar&lt;br /&gt;175 ml de água morna&lt;br /&gt;&lt;br /&gt;Coloca-se, por esta ordem, a água, o ovo, o azeite, o açúcar, o sal, a farinha e o fermento na cuba da máquina. Inicia-se o programa "Massa" e ao sinal sonoro juntam-se as azeitonas picadas. Quando terminar, dá-se forma de pão à massa e deixa-se levedar em local morno, coberta com película aderente, até dobrar o volume (cerca de meia hora). De seguida, pincela-se com gema de ovo misturada com azeite (para dar um acabamento brilhante) e saplica-se com sementes de sésamo. Escorrem-se em papel absorvente.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;Fizemos apenas 1/3 da receita, com parmesão e mozzarela, e deu cerca de uma dúzia.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;Ficaram boas, mas talvez um pouco gordurosas. Moldam-se rolinhos e achatam-se com as palmas das mãos, coloca-se um montinho de queijo, ketchup e enrolam-se nas salsichas. Dispõem-se os rolinhos sobre um tabuleiro enfarinhado e pincelam-se com leite. Junta-se 1 colher de chá de baunilha (usei essência). Juntam-se os ovos, um a um. Bate-se tudo até o açúcar se dissolver. Junta-se então a farinha peneirada com o fermento.&lt;br /&gt;&lt;br /&gt;Corta-se a pêra em tiras, borrifa-se com sumo de limão e colocam-se no fundo de uma forma de bolo inglês (a receita original diz para untar com margarina, mas em vez disso utilizei papel vegetal no fundo).&lt;br /&gt;&lt;br /&gt;Agora começa a parte da invenção, em relação à receita original: dividi a massa em dois. A uma parte juntei amêndoa ralada (umas 50 g) e a outra chocolate em pó (umas duas colheres de sopa). Coloquei a massa com amêndoa sobre as fatias de pêra e de seguida a massa com chocolate.&lt;br /&gt;&lt;br /&gt;Vai ao forno a 175 ºC durante pouco mais de uma hora. Picam-se as cebolas e corta-se o alho-francês às rodelas. Refoga-se a cebola na margarina até ficar transparente. Junta-se o alho-francês e deixa-se cozinhar durante 5 min. Polvilha-se com a farinha, mexendo, e junta-se o leite e o caldo. Tempera-se com o sal, a pimenta e a noz-moscada e deixa-se cozinhar em lume brando durante 5 min. Acresenta-se o fiambre cortado às titinhas e retira-se do lume. À parte, batem-se os ovos e junta-se-lhes um pouco do molho dos legumes. Mexe-se e junta-se então aos legumes. Coloca-se o esparguete no fundo de um tabuleiro de ir ao forno e por cima o preparado de legumes e ovos. Mas hoje decidimos fazer para todos e escolhemos um com ingredientes que eles gostassem: frango e tomate seco.&lt;br /&gt;&lt;br /&gt;A receita original (em Petiscos.com) é a seguinte:&lt;br /&gt;&lt;br /&gt;1 chávena de arroz arbóreo ou carnaroli&lt;br /&gt;4 chávenas de caldo de aves&lt;br /&gt;Tomate seco a gosto&lt;br /&gt;2 peitos de frango&lt;br /&gt;1 chávena de miolo de camarão&lt;br /&gt;1 dente de alho&lt;br /&gt;1 cebola pequena&lt;br /&gt;Azeite e um pouco do azeite da conserva do tomate seco&lt;br /&gt;&lt;br /&gt;Refogar em azeite a cebola, o alho, o frango, o camarão e o tomate seco.&lt;br /&gt;Depois de alguns minutos juntar o arroz e deixar mais uns minutos para envolver os sabores.&lt;br /&gt;Regar gradualmente com o caldo, deixando evaporar a cada adição.&lt;br /&gt;Rectificar os temperos e servir polvilhado com parmesão ralado (se gostar).&lt;br /&gt;&lt;br /&gt;Alterações que fizemos:&lt;br /&gt;&lt;br /&gt;Usámos 2 chávenas de caldo de aves Knorr e 2 chávenas de caldo de legumes caseiro que fizémos há uns dias e congelámos.&lt;br /&gt;Substituimos os peitos de frango por coxas, porque era o que tinhamos em casa!&lt;br /&gt;Não usámos camarão.&lt;br /&gt;No refogado, antes de juntar o arroz, juntámos um pouco de cachaça (talvez umas 2 colheres de sopa) e mangericão seco.&lt;br /&gt;&lt;br /&gt;Depois de pronto, em vez de polvilhar com parmesão, juntámos parmesão ralado na altura e um pouco de mozzarella ralado (cerca de 1 chávena, no total) e envolvemos.&lt;br /&gt;&lt;br /&gt;Ficou muito cremoso e saboroso! Os miúdos começaram por não achar muita graça, mas acabaram por comer bem. Junte essa mistura aos secos, sem bater. É mesmo só para misturar.&lt;br /&gt;Descasque e esmague as bananas e junte-as à mistura. Dê mais uma mexida, só para incorporar. O segredo de um muffin fofinho é esse, não bater muito nem usar batedeira.&lt;br /&gt;Distribua a massa nas forminhas e leve ao forno até que ao espetar um palito no centro da massa ele saia limpo (cerca de meia hora). Adiciona-se a farinha, o açúcar, o fermento e a canela, até se obter uma massa homogénea. Deixa-se descansar. Podem ficar mais húmidos (às vezes um pouco moles...) ou mais secos, consoante o tipo de queijo que se usar.&lt;br /&gt;&lt;br /&gt;Normalmente usamos mozzarella ralado, mas já fizemos com flamengo, parmesão e até com queijo fresco.&lt;br /&gt;&lt;br /&gt;Receita (é a que vem nos pacotes de polvilho Globo):&lt;br /&gt;&lt;br /&gt;250 g de polvilho azedo&lt;br /&gt;1 chávena de leite&lt;br /&gt;1/2 chávena de óleo&lt;br /&gt;1 pitada de sal&lt;br /&gt;2 ovos&lt;br /&gt;1 chávena de queijo&lt;br /&gt;&lt;br /&gt;(Dá para cerca de 18/20 pãezinhos. Para nós os quatro, costumamos fazer metade.)&lt;br /&gt;&lt;br /&gt;Leva-se ao lume um tacho com o leite, o óleo e o sal até levantar fervura. Retira-se do lume, junta-se o polvilho e mexe-se bem até escaldar todo o polvilho. Juntam-se os ovos e o queijo e mexe-se bem, até obter uma massa homogénea. Com duas colheres de sopa, moldam-se bolas pequenas, que se vão colocando num tabuleiro. E os miúdos adoram!&lt;br /&gt;&lt;br /&gt;Desta vez não havia carne, pois decidimos fazer um jantar com a seguinte ementa: sopa, montinhos de legumes, brusquetas de tomate e queijo, pãezinhos de queijo e para sobremesa, panquecas de abóbora.&lt;br /&gt;&lt;br /&gt;Nestes legumes pomos sempre beringela, courgette e tomate. Depois pomos alho francês ou cebola, cogumelos se houver... e queijo para gratinar, claro!&lt;br /&gt;&lt;br /&gt;Coloca-se no fundo de um tabuleiro de barro um fio de azeite e sal, por cima o alho francês ou a cebola em rodelas, depois rodelas de beringela, de courgette, de tomate, etc.. A receita (com algumas aletrações) é a seguinte:&lt;br /&gt;&lt;br /&gt;1 1/3 copo de leite com 2 ovos dentro&lt;br /&gt;2 cl. sopa de margarina&lt;br /&gt;1 cl. chá de sal&lt;br /&gt;6 cl. de sopa de açúcar&lt;br /&gt;1 cl. chá de sementes de erva doce (usámos em pó, moídas no moinho de café)&lt;br /&gt;4 copos de farinha de trigo&lt;br /&gt;2 cl. chá de fermento biológico seco&lt;br /&gt;&lt;br /&gt;Colocam-se os ingredientes pela ordem indicada na cuba na máquina e liga-se no ciclo "Massa".&lt;br /&gt;Quando estiver pronta, coloca-se numa superfície polvilhada com farinha, amassa-se um pouco para retirar o ar e divide-se em 7 porções.&lt;br /&gt;Enrola-se cada uma das porções numa pequena espiral, coloca-se uma delas no centro de uma forma untada e polvilhada e colocam-se as outtas 6 em volta.&lt;br /&gt;Tapa-se com película aderente, cobre-se com um pano e deixa-se levedar até o volume dobrar (cerca de meia hora).&lt;br /&gt;Depois de levedado, pincela-se com gema de ovo batida com um pouco de óleo. Por fim, polvilhei com açúcar em pó e erva doce, também em pó.&lt;br /&gt;Vai ao forno a 200 ºC por cerca de meia hora, até dourar.&lt;br /&gt;&lt;br /&gt;Pode também ser feito sem máquina de fazer pão, amassando todos os ingredientes à mão e deixando levedar em recipiente coberto e em local morno, resguardado de correntes de ar. Desde que temos uma máquina de fazer pão que fazemos a massa de pizza em casa, seguindo a seguinte receita:&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Massa de Pizza:&lt;/strong&gt;&lt;br /&gt;1 copo de água morna&lt;br /&gt;1 1/2 colher de chá de sal&lt;br /&gt;3 colheres de sopa de azeite&lt;br /&gt;3 copos de farinha&lt;br /&gt;1 1/2 colheres de chá de fermento biológico seco&lt;br /&gt;&lt;br /&gt;Colocam-se os ingredientes pela ordem indicada na cuba na máquina e liga-se no ciclo "Massa".&lt;br /&gt;&lt;br /&gt;Quando a massa estiver pronta, estica-se num tabuleiro de ir ao forno. Pincela-se com mollho de tomate e coloca-se queijo ralado por cima. Depois distribui-se o recheio (neste caso, tomate, beringela e azeitonas) e rega-se com um fio de azeite.
